From my kitchen

Yam, Black Bean, and Green Chile Hash

Inspired by my daughter who is on a gluten free diet,
I made a delicious yam, black bean and green chile hash.

Here is the recipe:
Olive oil to coat cast iron skillet
1 white onion diced
1 large Yam  diced
1 can organic black beans
1 whole Ortega green chile diced
Garlic salt.
small amt of water as needed.
Cilantro if desired

Start by carmelizing onions in olive oil.
Add the diced yam to mixture.
add a little water as needed
After that has cooked together
add the can of black beans and diced green chile.
Cover and steam as needed until tender.
Approx 10 minutes


Garnish with cilantro if desired.

  5. My husband loves anything with black beans and I love yams. In fact, I had a sweet potato for lunch yesterday and fresh, sliced tomatoes and green pea salad. So good.
